Rebel Heart

  • 40ml Grace O’Malley Blended Irish Whiskey
  • 30ml fresh lemon juice
  • 20ml sugar syrup
  • 1 fresh egg (white or aquafaba)
  • Dry red wine, or 10 year old Madeira wine

Put all ingredients into a shaker with ice. Shake and strain into a sour glass or prosecco flute. Carefully float with the red or Madeira wine.

This drink gets its name from visual effect of the red / Madeira wine.
