  • Firkin Rare: Teaninich 2010 Custom Cask Tawny Port – RRP 97,00

    To create this Rare expression, Mike Collings started with a single ex-bourbon cask of Teaninich, distilled in 2009. He then gave it a second maturation in one of his custom double-oak casks. These are hand-made by a skilled cooper from ex-bourbon staves combined with virgin French oak. The resulting double-oak cask is then soaked with Tawny port, so that the wood takes up the Port's rich fruity flavours.   • Firkin 49 Dailuaine 2012 Scotch Single Malt – RRP 97,00

    Firkin 49: Dailuaine 2012 is a single malt Scotch whisky crafted by The Firkin Whisky Co. This unique expression is distilled at the Dailuaine Distillery in the Speyside region of Scotland. It is aged in a custom double oak cask, which combines ex-bourbon staves with virgin French oak, and is then soaked with Oloroso and Amontillado sherry to impart rich and complex flavors. To create this rare expression, a single ex-bourbon cask of Dailuaine, distilled in 2012, is given a second maturation in a custom double-oak cask. The cask is hand-made by a skilled cooper and soaked with Oloroso and Amontillado sherry, allowing the wood to absorb the sherry's rich fruity flavors.   • Firkin Islay: Caol Ila 2012 Custom Cask Marsala – RRP 97,00

    The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This single malt whisky was distilled at the Caol Ila distillery before being placed in an ex-Marsala Cask and left to mature for 7 years. Bottled at 48.9% abv as part of the The Firkin Whisky Co.     Dingle Grianstad an Gheimhridh. In Irish, this means the winter solstice, which occurs when the sun is at its furthest point from Earth, leading to cooler days and longer periods of darkness. Grianstad an Gheimhridh marks the beginning of a time of decline; fields lay fallow, trees have shed their leaves, and wild animals have settled in for winter. In Dingle, this is a time for friends and family, and long evenings spent together by the hearth of the home. Usually celebrated on December 21st, Grianstad an Gheimhridh is one of the two solstices, and marks the depths of winter. At Dingle Distillery we mark this solstice by enjoying a glass of our favourite Dingle Single Malt while relaxing by the fire. Fifth in the new series of limited-edition whiskeys distilled, matured, and bottled at Dingle Distillery, this release has been matured in first filled bourbon casks before a long finish in tawny port casks.   • Dingle Distillery Bealtaine – RRP 95,95

    This third in its Wheel of the Year series, the Dingle Bealtaine Single Pot Still has matured in Bourbon casks with a Shiraz cask finish. There are 5,500 bottles set to be released of this limited release that have been bottled at 52.5% ABV. Bealtaine Single Pot Still expresses sweet aromas of sun-dried raisins, sweet dates, and vanilla cream on the nose. On the palate, it is warm with a suggestion of dark cherries in syrup, nutty caramel, and velvety dark chocolate. The syrup texture slowly melts to a warm spice finish. The result is a unique and vibrant flavour. The new release is set to be highly sought after due to the limited supply available. The Celtic Wheel of the Year is divided into eight periods and following suit the Wheel of the Year series from Dingle Distillery is set to launchnine editions, which includes an additional ninth and final release to mark Wren’s Day, following the rhythm of the seasons, equinoxes, and solstices. Though Wren’s Day is not part of the Celtic Wheel of the Year, its release is in recognition of the importance of the day in Dingle culture and heritage. The ancient Celtic celebration of Bealtaine marks the end of spring and the beginning of summer. In Irish history the festival was marked with animals moving to summer pastures and the lighting of bonfire. The beginning of the summer season was said to have started with fire festivals at Bealtaine. These fires marked a cleanse and transition into the new season with the hope of successful harvests to come.
