Dingle Whiskey, a true reflection of its environment, is the epitome of craftsmanship. From the pure, localized well water to the painstakingly manual mashing process and the wooden fermentation vessels that feed into three bespoke copper pot stills, every step of production is uniquely Dingle. The Dingle Whiskey Distillery is not about creating megabrands or distilling for others. With a modest scale and an artisan ethos, Dingle has rekindled the heritage of independent Irish distilling. Two centuries ago, Ireland boasted more than a hundred officially recognized distilleries, yet by the start of the 21st century, that number dwindled to two.
In November 2012, Dingle Whiskey made history when its first spirit flowed from the stills, marking a milestone for Irish distilling. Today, that spirit matures in Ireland’s mild, moist climate, becoming the magnificent single malt whiskey that bears the Dingle name. Alongside this exceptional whiskey, Dingle Distillery also offers the fruits of its dedication in the form of Dingle Original Gin and Dingle Distillery Vodka, each crafted with the same passion and precision.

This exceptional 13‑year‑old Single Malt marks a significant milestone for Dingle Distillery. Crafted with water from the distillery's own well, this exceptional gin is infused with local botanicals such as rowan berries from mountain ash trees, fuchsia, bog myrtle, heather, and hawthorn. It captures the essence of the Kerry landscape, offering a taste like no other. Dingle Original Gin is the result of extensive research, both technical and historical, as well as experimentation. Our goal was to create a unique gin that honors the great tradition of gin distilling while introducing innovative elements. Categorized as a London dry gin, Dingle Original Gin stands out with its distinctive character and flavor, derived from our meticulous selection of botanicals. These flavors are macerated in spirit for 24 hours before the spirit is distilled and passes through a flavor basket in the neck of the still. This process highlights the attention to detail that defines our approach to the art of distillation. For a true taste of the Kerry landscape, we use botanicals including rowan berry, fuchsia, bog myrtle, hawthorn, and heather. This unique formula is designed to evoke a sense of place and provenance. The spirit is collected at 70% ABV and then cut to 42.5% ABV using the purest water, drawn from our own well, 240 feet below the distillery. As Peter Mosley describes it: “The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. Also known as Wren’s Day, Lá an Dreoilín is a day of music, costumes and street parades. Dingle Lá an Dreoilín Single Pot Still is dedicated to this thriving tradition of revelry and good-humoured mischief which is celebrated on December 26th. Matured in former Bourbon casks with a long Muscatel cask finish, Dingle Lá an Dreoilín Single Pot Still brings aromas of sugared almonds and black cherries with dark chocolate and caramelised bananas. Cónocht an Fómhair falls between the harvest festival of Lúnasa and the otherworldly festival of Samhain. As an equinox, it brings a natural balance to the land before descending into the depths of winter. Farmers recognise this as a time to prepare for shorter, cooler days ahead. Dingle Grianstad an Gheimhridh. In Irish, this means the winter solstice, which occurs when the sun is at its furthest point from Earth, leading to cooler days and longer periods of darkness. Grianstad an Gheimhridh marks the beginning of a time of decline; fields lay fallow, trees have shed their leaves, and wild animals have settled in for winter. In Dingle, this is a time for friends and family, and long evenings spent together by the hearth of the home. Usually celebrated on December 21st, Grianstad an Gheimhridh is one of the two solstices, and marks the depths of winter. At Dingle Distillery we mark this solstice by enjoying a glass of our favourite Dingle Single Malt while relaxing by the fire. Fifth in the new series of limited-edition whiskeys distilled, matured, and bottled at Dingle Distillery, this release has been matured in first filled bourbon casks before a long finish in tawny port casks. This will be a very limited release, with just 10,000 bottles available globally. *Grianstad an Gheimhridh is one of the two solstices, and marks the depths of winter.
