In 1600, the castle was held by Spanish forces but was captured by the English during the Siege of Kinsale after a fierce cannon attack. Today, the remnants of Ringrone Castle lies just a stone’s throw from our brewery and distillery, inspiring us to create the first whiskey produced entirely in Kinsale, Ireland. J.J. Corry Hanson Whiskey is a unique blended grain Irish whiskey. It is matured in bourbon and American craft whiskey casks sourced from Kentucky, Tennessee, and New York. This whiskey is named after J.J. Corry’s son-in-law, who was known as “The Gauger Hanson” due to his role as a revenue inspector in the early 1900s. The Hanson is known for its rich and deep notes of vanilla fudge and toasted coconut, with top notes of griddled pineapple and lime. In the 1800s, renowned cartographer Eugene Curry traveled across Ireland's western regions, mapping the country's rural towns for the first time. When he came across a peculiarly shaped bend in the road near a bridge in Cooraclare, he compared the village street's shape to that of a pig's elbow, a name that has affectionately lasted for 180 years. Distilled at 40% in Cooraclare, County Clare, The Pig’s Elbow Gin is noted for its traditional juniper flavor with refreshing undertones of citrus, pear, cucumber, and a hint of black tea. Hanácká Vodka 0.7L – RRP 19,99
The basis for the production of Hanácká vodka are clear water from deep wells in Haná and fine alcohol and six-fold filtration through activated carbon, which gives the vodka a delicious fineness. The production of the oldest Slavic vodka has been in the same town in Prostějov for centuries, where a distillery was already standing in 1518. The first known distillery was Mates from Prostějov, the ancestor of Prostějov distillers. Hanácká vodka was created according to the rule of honesty using a simple method of measurement using a silver Prague groschen in a densitometer. In this way, he produced a masterpiece of purity, which at the time was called “vodka”, for which the name vodka was later adopted. And that is why Hanácká is the oldest vodka in the world. Firkin Rare: Teaninich 2010 Custom Cask Tawny Port – RRP 97,00
To create this Rare expression, Mike Collings started with a single ex-bourbon cask of Teaninich, distilled in 2009. He then gave it a second maturation in one of his custom double-oak casks. These are hand-made by a skilled cooper from ex-bourbon staves combined with virgin French oak. The resulting double-oak cask is then soaked with Tawny port, so that the wood takes up the Port's rich fruity flavours. It is aged in a custom double oak cask, which combines ex-bourbon staves with virgin French oak, and is then soaked with Oloroso and Amontillado sherry to impart rich and complex flavors. To create this rare expression, a single ex-bourbon cask of Dailuaine, distilled in 2012, is given a second maturation in a custom double-oak cask. The cask is hand-made by a skilled cooper and soaked with Oloroso and Amontillado sherry, allowing the wood to absorb the sherry's rich fruity flavors. Firkin Islay: Caol Ila 2012 Custom Cask Marsala – RRP 97,00
The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This is a single cask bottling of single blended Caribbean rum (rum made from both column and pot still at the one distillery). Molasses-based, distilled at Angostura Distillers in Trinidad & Tobago. This Rum is sold as a NAS (No Age Statement) rum, but we are reliably informed that it was tropically matured for around 6 years in Trinidad then transferred to Mikes custom, hybrid, ex-Speyside whisky cask in Scotland to finish for 18 months. Bottled at 43% abv, the result is a wonderfully rich and fruity rum that is eminently sippable neat and perfectly at home paired with your favourite mixer around the pool.
