When he came across a peculiarly shaped bend in the road near a bridge in Cooraclare, he compared the village street's shape to that of a pig's elbow, a name that has affectionately lasted for 180 years. It captures the essence of the Kerry landscape, offering a taste like no other.Dingle Original Gin is the result of extensive research, both technical and historical, as well as experimentation. Our goal was to create a unique gin that honors the great tradition of gin distilling while introducing innovative elements.Categorized as a London dry gin, Dingle Original Gin stands out with its distinctive character and flavor, derived from our meticulous selection of botanicals. These flavors are macerated in spirit for 24 hours before the spirit is distilled and passes through a flavor basket in the neck of the still. This process highlights the attention to detail that defines our approach to the art of distillation.For a true taste of the Kerry landscape, we use botanicals including rowan berry, fuchsia, bog myrtle, hawthorn, and heather. This unique formula is designed to evoke a sense of place and provenance. The spirit is collected at 70% ABV and then cut to 42.5% ABV using the purest water, drawn from our own well, 240 feet below the distillery.As Peter Mosley describes it: “The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper.
