History of Ringrone Castle. Perched above the River Bandon, just south of Kinsale, this 13th-century castle was constructed on land granted to Milo de Cogan by Henry II. In 1600, the castle was held by Spanish forces but was captured by the English during the Siege of Kinsale after a fierce cannon attack. Today, the remnants of Ringrone Castle lies just a stone’s throw from our brewery and distillery, inspiring us to create the first whiskey produced entirely in Kinsale, Ireland. J.J. Corry Hanson Whiskey – RRP 54,99
J.J. Corry Hanson Whiskey is a unique blended grain Irish whiskey. It is matured in bourbon and American craft whiskey casks sourced from Kentucky, Tennessee, and New York. This whiskey is named after J.J. Corry’s son-in-law, who was known as “The Gauger Hanson” due to his role as a revenue inspector in the early 1900s. The Hanson is known for its rich and deep notes of vanilla fudge and toasted coconut, with top notes of griddled pineapple and lime. On the palate, it offers flavors of green apples, toasted coconut, rye grass, and lemongrass. It is bottled at 46% ABV and is praised for its creamy vanilla, sweet fruit, and subtle spice. The Pig's Elbow Irish Style Dry Gin, a classic juniper-forward gin, derives its name from an intriguing historical tale. In the 1800s, renowned cartographer Eugene Curry traveled across Ireland's western regions, mapping the country's rural towns for the first time. When he came across a peculiarly shaped bend in the road near a bridge in Cooraclare, he compared the village street's shape to that of a pig's elbow, a name that has affectionately lasted for 180 years. Distilled at 40% in Cooraclare, County Clare, The Pig’s Elbow Gin is noted for its traditional juniper flavor with refreshing undertones of citrus, pear, cucumber, and a hint of black tea. Dingle Grianstad an Gheimhridh. In Irish, this means the winter solstice, which occurs when the sun is at its furthest point from Earth, leading to cooler days and longer periods of darkness. Grianstad an Gheimhridh marks the beginning of a time of decline; fields lay fallow, trees have shed their leaves, and wild animals have settled in for winter. In Dingle, this is a time for friends and family, and long evenings spent together by the hearth of the home. Usually celebrated on December 21st, Grianstad an Gheimhridh is one of the two solstices, and marks the depths of winter. At Dingle Distillery we mark this solstice by enjoying a glass of our favourite Dingle Single Malt while relaxing by the fire. Fifth in the new series of limited-edition whiskeys distilled, matured, and bottled at Dingle Distillery, this release has been matured in first filled bourbon casks before a long finish in tawny port casks.
